Homemade fudge.....makes a good Christmas gift!!! And who doesn't love it??

I have tried to find and make nice homemade fudge for a while w/out much success.  Does anyone here have a good recipe for it?  Also if you have a nice low cal one.  If there is such a fudge recipe as a low cal one! hah!

 Also what is your fav kind of fudge?  I like chocolate w/ nuts and marshmallows.  Preferably dark chocolate.  Sometimes I enjoy the white chocolate fudge, however.

This is my recipe Margba.  Definitely not low cal.......LOL

RICH CHOCOLATE FUDGE:

In four quart sauce pan combine:

4 cups sugar

1/2 cup butter

1 12 oz can evaporated milk

Cook over medium heat stirring occasionally until mixture comes to full boil. Reduce heat to medium stirring constantly until candy thermometer reaches 228 degrees.

Remove from heat and gradually stir in 

1 12 oz pkg semisweet chocolate chips

12 oz. Bakers semisweet baking chocolate (12 squares)

1 7 oz jar marshmallow cream

2 tsp vanille  and stir until well blended.

Spread into buttered 13 x 9 inch pan. Cool completely at room temperature.

I pay my electrical bills with this fudge.  DDs S/O is an electrician and he charges me fudge for any electrical repairs.  Good deal eh.

LOL!!  Albertagran, that sure does sound good!!!  I'd love to chow down on a good piece of homemade fudge right now!  When you fisrt started telling about how you pay your elec bills w/ the fudge, I thought you were going to say you make it and sell it and make a lot of bucks by it and you make enough to pay a lot of your bills and such!  Thanks so much for sharing it!

MaryAnn/Birdbug makes good fudge and has told me stories similar to that, that folks don't want money from her for helping her w/ something like shovelling the drive in the winter but they just want some of that fudge she makes!!! lol!  I hope MaryAnn sees this post and shares her fudge stories w/ us!

My Mom used to make it for the Devon Horse Show, a famous horse show in PA.  Proceeds are charitable.

Margba he installed two outside outlets for my Christmas decorations and he did a bunch of rewiring at the lake because he didn't like the looks of the wiring up there, ALL FOR FUDGE. The other day he was in the garage with my husband and he noticed something about the wiring out there, so I guess I better get my fudge pot out !!!!!!

I make candy to give as gifts each Christmas. I have lots of recipes including fudge, texas haystacks, ritz crackers filled with pb and dipped in chocolate, peanut clusters, peanutbutter balls, toffee, hello dolly bars, almond bark candy,white chocolate peppermint fudge, white trash and of course I do chocolate dipped pretzels. My favorite are the ritz and the peanut clusters.

 

Here is a recipe for microwave fudge...really easy

2 cups sugar

6 tbls. cocoa

3/4 cup milk

1/2 cup REAL butter

1 tbls. white corn syrup

1 tsp vanilla

combine all ingredients (except vanilla) Microwave on high for 5 minutes. Stir until sugar dissolves. Microwave for 7 more minutes. Stir and cool at least 30 minutes. Add vanilla and beat until dull. pour into your pan,,,,,enjoy!

 

Here is another...non cook

1 pkg (8 oz) cream cheese softened

4 cups powdered sugar

1 1/2 tsp vanilla

12 oz white almond bark

3/4 cup chopped nuts

Beat cream cheese, sugar and vanilla until smooth. Melt almond bark in double boiler. fold almond bark into first mixture...add nuts spread in greased 8 " pan and cill until ready to serve

 

I am going to try Albertagrans this year.....sounds good.

I have a friend that makes me a batch of your fudge every Christmas. It is very good.

 
Donna, I have been making this for a long time, but have never known the name of it. Its where you take the white almond bark, honey graham cereal, and pecans to make candy. so good. Do you know what you call it??  Love the pretzels dipped in the white almond bark.

This year I am making my fudge and some pralines .  GD suggested we make some truffles too,but we will see.

Fudge is SO expensive to buy in the shops.

I have made it in the past, but find I eat too much of it before it is ready.

Donna, could you share a few of your candy recipes either in this thread or if you'd like to start your own.

Pat, do you know of the Devon Horse Show??  I grew up around those things.  My Dad was a staff doctor at Bryn Mawr Hospital, which proceeds in part from the Devon Horse Show go to the hospital.  I used to have to help my Mom man the fudge booth w/ my other sisters.  We made it all at home for weeks ahead of time to sell at the horse show.  I always got free tickets to go there.  Haven't been there in years, though.  I still have an old friend who is Chairman, actually Chairwoman of the horse show but her dh isn't a doctor at Bryn Mawr Hosp or anything.  Had no idea anyone would even know of the Devon Horse Show!!!  You didn't ever go, did you?

Margba I don't have the recipe for it, but it is made with graham cracker pieces, really small pieces, melted white chocolate and nuts and you put it in a ziploc bag and roll all the pieces of crackers and nuts around in the white chocolate and then put it on a tray. If I find the recipe again I will post it.

Donna, any of them that you wish.  Do you have a recipe to make butterscotch candies?  Always wanted to make those.

Sorry Margba, no recipe for butterscoth candies, maybe someone else has one.

 

Peanut clusters

2- 10 oz pkgs spanish peanuts

2- 12 oz pkgs of chocolate chips

1 1/4 lb white almond bark....just remove two pieces from full pkg

 

Melt almond bark in double boiler athen add chips one pkg at a time to melt. Add peanuts and drop by tsp onto waxed paprer. These are really great but take a little while to set up

 

Another drop candy...

2 lbs white almond bark

3/4 cup crunchy peanut butter

2 cups mini marshmallows

2 cups unsalted peanuts

3 cups rice krispies

Melt choc, add peanut butter and stir to melt. Add other ingredients and mix well.

Drop by tsp onto waxed paper.
